Natural Size Variation
Isn't it strange that every entity of a type has the exact same size? Let's change that.
With Natural Size Variation every spawned entity gets a random scale modifier assigned, meaning that every mob you encounter is unique. The scale modifier is based on a normal distribution, ensuring that most entities are near their normal size and extreme values only happen rarely.

How to Install Natural Size Variation on Your Server
Order Server
Order a Minecraft Java server with at least 3 GB RAM (4 GB recommended).
Set fabric Loader
In the panel under "Egg", select the fabric loader and matching Minecraft version (1.21.2).
Install Mod
Open the mod browser in the dashboard and search for "Natural Size Variation". Click "Install" – done! Alternatively, upload the .jar via SFTP to the /mods folder.
